Walking in the English countryside, enjoying the soft, curved lines of the hills on the horizon is, for me, one of life’s great pleasures. There is nothing more peaceful and more enchanting for the spirit.
However, at such times, it is easy to overlook an essential part of our spiritual and physical well-being: The soil we walk on, or our children play with is the foundation for our lives. Whatever we eat comes from it and in the last few decades the consciousness of a healthy earth is becoming a vital issue for the future of our Planet and its descendants.
If the soil is abused, damaged or altered we pay the consequences. Producing food is not only a business, but an ethical and political decision. What we give to the earth is eventually returned to us. If we provide it with the right, natural nutrients, if we treat it accordingly with Nature’s rules, we will receive back natural, healthy, nutrient rich food. If we add chemicals, herbicides, and pesticides we will receive them back, in some way or another, on our tables and… in our bodies too.
So many of my patients who are pregnant, or who have new babies, are adamant about sticking to an organic diet for the sake of their baby, and rightly so. “But what about when your baby grows up?” I always then ask…
Our choices should be driven not by the fear of diseases, but by love and respect to everybody. We all are linked to each other and linked with the earth we come from. Don’t eat organic only when pregnant or feed organically your baby only when he/she is small. Its (and our) future depends from the choice we make today. Think ahead.
The Organic movement was born to avoid the contamination and the poisoning of the soil and to protect the Planet we live in, our health and our future. And we have chosen many years ago to be certified organic, under the Soil Association symbol and standards, to guaranty the quality of our products and to affirm our respect and our love for the earth and you all.
To be based, with our laboratory, on the Roskilly’s organic farm has been a blessing in so many ways. The Roskilly’s have been so welcoming and supportive, and we have always shared the same ethos: producing organic product respecting the environment. They produce food for the palate (the famous Roskilly organic ice cream and fudge) and we produce food for the skin!
However, we also contribute, in a very special way, to the taste and quality of Roskilly’ s milk and the idea came from Jo, the patriarch: one day he saw outside our lab what we call “the herb pizza”.
Jo asked me what this colourful disc of vegetation was, and I explained that it was the final result of our infusing process: we infuse the flowers and herbs in olive oil (herbal oils) to extract all their beneficial ingredients (vitamins, carotenoids, antioxidant etc). After one month we squeeze, press and filter this blend of oil and herbs to produce in house the base of our wonderful organic products. What comes out from the press is a compact, round, hard “pizza” of the dried herbs and flowers. “Well”, he said joking, “I could blend this “pizza” with the cows feed – I’m sure they’ll love it!”…
“Why not?” I replied, and since then the Roskilly’s cows always look forward to their monthly treat…So next time you have some Roskilly’s ice cream or fudge, you’ll know exactly what that it is that makes Roskilly’s extra special!
